The Midnight Mocha: Where Dark Dessert Meets Living Bread.

The Midnight Mocha is the flagship Gourmand bake from the Island Thyme Sourdough Lab. Cocoa. Espresso. Chocolate Chips. Honey. Cherries. It is designed to be a sensory contradiction — the deep, bitter luxury of a dark dessert paired with the bright, lactic tang of a perfectly fermented sourdough.

To achieve this without creating a dense, cakey crumb, you have to respect the raw power of your inclusions. This masterclass teaches you exactly how.

What's Inside the Protocol:

  • The Gourmand Inclusion Matrix: How to calculate and compensate for the moisture, fat, and sugar load of cocoa, espresso, honey, and cherries without collapsing your gluten structure.

  • Bitterness vs. Tang — The Flavor Balance Framework: Precision fermentation targets to amplify lactic brightness and prevent the inclusions from flattening your sourdough character.

  • The Anti-Cakey Crumb Strategy: Lamination timing, hydration adjustments, and fold sequencing to maintain an open, airy crumb despite a heavy inclusion load.

  • Espresso & Cocoa Integration Protocol: When and how to add dry inclusions to protect fermentation activity and gluten integrity.

  • The Thermal Luster Guide: Baking instructions to manage the Maillard reaction and caramelizing sugars for a deep, glossy crust without scorching.

Digital Assets Included:

  1. Technical Recipe Sheets: Gram-based instructions for every stage of the bake.

  2. Scientific Tidbits: Bite-sized lessons explaining the why behind the how — from osmotic pressure to cocoa's impact on fermentation rate.

  3. Environmental Calibration Notes: How to adjust the protocol for your kitchen's humidity and temperature variables.

  4. Interactive Data Log: Track your starter pH, bulk rise percentages, and final internal temperatures for repeatable results.

Who Is This For?

Intermediate to advanced bakers ready to move beyond "vibes" and into data-driven, flavor-intentional baking. If you want a loaf that tastes like a patisserie and bakes like a science experiment, this is your blueprint.

Olive oil, coconut milk, coconut oil, avocado oil, palm kernel oil, sodium hydroxide, organic palm oil, mango butter, castor oil, fragrance, cosmetic mica

We use premium essential oils and clean, complex blends of phlatate and paraben free fragrances formulated for use in cold-process soap at levels within IFRA fragrance guideline.

To ensure the longevity of your coconut milk soap, store it in a dry, cool place between uses. Avoid leaving it in standing water or in direct sunlight, as this can cause the soap to melt or deteriorate faster. You can also prolong the life of your soap by using a soap dish with drainage holes. If you keep it dry in between uses, one 7 oz bar of Island Thyme Soap Co coconut milk soap will last about a month with daily use for one person.

Some soap makers use distilled or purified water for the hydrolysis, a chemical reaction in which water is used to break down the bonds of a particular substance. Think about how oil and water don't mix. Hydrolysis makes it possible. Some use goat milk, we use coconut milk! We chose to use coconut milk for the hydrolysis process because it contains a good concentration of lauric acid, a medium chain fatty acid that's an extremely gentle natural surfactant; foaming agent. When saponified during the soap making process, coconut milk creates a natural foam attributefor the lather! Coconut milk is also high in sugar, and sugar is good for making bubbles! It's a marriage made in soap making heaven!

Yes! Our soap recipe is formulated to gently clean without stripping the skin's natural protective barrier. It's safe for most skin types, including sensitive skin. However, everyone's skin is different. All our product include ingredients. If you have sensitivities and reactins to certain ingredient listed, we recommend avoiding them.

A true soap is only as good as its ingredients. Each artisan soap maker spends countless hours of testing tens of ingredient combinations before they are satisfied with the properties of their own unique recipe. We are very proud of ours and our loyal customers who come back again and again tell us we should be.
